Sapor with its funky and totally invented little underlined o, is our food-team's twist on the Latin root sapor -- from which a host of words meaning to try, to flavor, to come to know, and to be wise all derive. Thinking of ourselves as explorers who are hip to culinary education, innovation, and mixing things up, we also respect the fact that in the kitchen and behind the bar, nothing beats or replaced Pacific Northwest basics -- locally sourced fish and crab, farm-to-table fruits and vegetables, rich wines IPAs, and fungi. (Oh yes, and we do create concoctions from plucked Pacific Silver pine needles.)
